Overview
This course is specifically designed for those with an interest in small-scale commercial canning. It provides participants with the knowledge and skills to effectively supervise such retort operations.
Days 1 and 2 cover the essential skills for safe operation of home canners. This level of training will be necessary for any staff working with the equipment. Following a successful exam, attendees will be awarded a ‘Retort Assistant’ certificate
Days 3 to 5 continue to cover other commercial retort systems, microbiology, can seam analysis and process calculations. Following a successful exam, attendees will be awarded a ‘Retort Supervisor’ certificate
Those completing the course will understand the fundamentals of thermal processing, the practicalities of applying these processes, and how they relate to the safety and general quality of the products processed.
In addition, opportunity will be provided for specific training in monitoring and analysis of can seams. Ensuring the integrity of pack closures is essential to maintaining the safe shelf life of the product.

Accommodation and Transport
Participants must organise their own accommodation, and transport to and from the course.
What Participants Need to Bring
Participants are required to bring covered-in waterproof shoes, preferably steel-capped boots for the practical sessions, plus notepad, pen or pencil and highlighter.

Course Presenter
The course presenter is Mr Chis Bourne, an experienced "Thermal Process Authority". In that role he has carried out thermal process validation studies for a number of companies using a range of different retorts, in both Australia and internationally. He has attended training in retort process design and process optimisation in Canada and the UK.
