Overview


Extrusion is a processing technology used to manufacture a wide range of products in the food and related industries - from snacks, breakfast cereals, and pasta to petfoods and aquafeeds. It is also used for manufacturing plant-based "meats". This webinar will provide an overview of the uses of this technology, and the science behind making it work. Areas reviewed will include:

  • What is extrusion cooking

  • How does an extrusion process work

  • Types of extruder Ingredients and how they are cooked

  • The importance of rheology in understanding extrusion

Course Presenter


The program is presented by Dennis Forte, a chemical engineer with extensive experience in extrusion processing and die design, having worked with a variety of companies and extruded products, including breakfast cereals and snacks, pet foods and aqua-feeds, pasta, and confectionery, and plant-based meat replacements.
